Goût de France 2017 in Bugenvila

The first day of spring, the 21st of March 2017, two thousand restaurants around the world will be marking the day with a gastronomic event. Goût de France, or Good France, is a project that was organized on the initiative of Alain Ducasse and the Ministry of Foreign Affairs and International Development in France.

And among the select few restaurants in Croatia that will be celebrating this special event is the renowned Bugenvila in Cavtat.

“There are a number of restaurants who have been chosen to participate in this event and the fact that Michelin star chef Alain Ducasse has helped make this selection is an honour for us,” commented the founder and co-owner of Bugenvila, Igor Korousic. In fact there are only seventeen restaurants in the whole of the country that have been especially selected to enter.

This is the third consecutive year that the Goût de France has been held. With the slogan 2,000 chefs – 2,000 restaurants – 5 continents this event, which will take the form of a dinner, will pay tribute to the excellence of French cuisine, its capacity for innovation, and the values that it represents: sharing, pleasure, and a respect for good food, good company, and the environment. Dinners served simultaneously in participating restaurants will honour the merits of French cuisine, its capacity for innovation, and its values: sharing, enjoying, and respecting the principles of high-quality, environmentally responsible cuisine.

“The menu is defined by seasonality, from the season of the vegetables to the fish and meat. Therefore we have planned a menu that reflects the season at the moment. I like the idea a tasting menu should reflect the joy of life as symbolised by spring,” added Korousic. “So how to combine this on a plate, certain ingredients are spring like, not just because of their colours but because of their energy,” concluded Korousic. And along with the menu Bugenvila will pair French wines with each course.
