Another week, another homemade tasty pasta? I’m in! This time, the recipe for pasta comes from the south or to be more precise, from the island of Korčula! To put it simply, Žrnovski makaruni is a hollow pasta. It is hand-made according to the ancient recipe of the island, and it is similar to the pasta called Maccheroni al ferretto which is made in the Italian region Calabria.
Žrnovski makaruni have oblong and hollow body. In the past, they were made by wrapping the dough around a cracked umbrella wire in order to have a hole in the body for the sauce.
This dish is a traditional one and, in its honor, every august, the town Žrnovo organizes Makarunada, a festival which promotes makaruni! This event has both humanitarian and entertaining character.
Due to that, today, we are preparing this amazingly delicious and traditional pasta, which can be combined with various sauces, meat, seafood, and more. But to keep it simple, we are preparing the pasta with a touch of cheese and fresh parsley. But in case you want a bit more flavors, you can always combine žrnovski makaruni with prawns or classic beef sauce, the decision is yours!
Ingredients
- 500 g pastry flour
- 250 ml warm water
- 1 egg yolk
- 50 ml olive oil
- ½ teaspoon salt
- grated cheese
- parsley
Kneading, shaping & cooking method
Step 1
Put flour, salt, and warm water into a bigger bowl. Mix all the ingredients with wooden ladle and then with your hands. Add egg yolk and knead everything until you get a nice and firm dough.
Step 2
Put the dough on the floured surface and knead it for a couple of minutes. Wrap the dough in the transparent foil and let it rest for half an hour.
Step 3
Divide the dough into 10 smaller pieces. Roll each piece into an oblong roller and cut it into small pieces (size of a cherry).
Step 4
Take a wooden or metal skewer and place it on one small piece of the dough. Connect the dough around it and then use the palms of your hands to roll it. Make an oblong shape, remove the skewer and let makarun rest. Repeat this method with the rest of the dough. In case the skewer sticks to the dough, just put a bit of flour onto it.
Step 5
To cook the pasta, put it into boiling and salted water for around 10 minutes.
Step 6
Serve pasta with grated cheese and parsley.
And again – pasta is really simple and easy to make, isn’t it? All you need is just a bit of time for shaping and an idea for serving, and that’s it!
Žrnovski makaruni are really tasty and probably my favorite – they can be served with different ingredients, sauces, and seasonings, so you really can’t go wrong with combining them!
I love pasta in the combination with simple ingredients and sauces, I always feel like that is the best way to really experience all the flavors of traditional and homemade pasta!
