Pasta? Istria. Simple as that!
When it comes to the Istria, you know you’ve got to try their pasta which is not only famous in Croatia, but throughout the world too! Istria is known for its authentic and specific recipes so let’s knead some dough!
Fuži are traditional pasta which has the specific shape of small flutes or spindle. This pasta is unique not only because of its interesting shape but also because of its ingredients of the preparation – its basic ingredients are eggs and flour, while the other types of pasta are made with water. Fuži require only a few drops of water in order to make the dough firm.
This recipe brings you a step-by-step guide for kneading and shaping fuži – the famous pasta of Istria! They will be served with a classic tomato sauce with rosemary. Let’s knead pasta!
Ingredients for Fuži -
- 2 eggs
- 350 g bread flour
- 1 tbsp oil
- 2 tbsp white wine
- 500 ml tomato juice
- 2 cloves of garlic
- 1 tsp olive oil
- ½ tbsp rosemary
- 1 sliced red pepper
- black pepper
- parmesan (optional)
Cooking Method Fuži -
Take a bigger bowl and put the flour in it. Make a small hollow in the center and add eggs, wine, and oil with a bit of water. Mix all the ingredients.
Keep mixing the ingredients until you get a dough. Sprinkle flour on the table, place the dough on it, and keep kneading for another couple of minutes until it is firm.
Roll out the dough thinly. Cut it into strips (approximately 3-4 centimeters) and then into squares (3-4 centimeters as well).
Now it’s time to make fuži. Take a ladle and place its end on one piece of the square (dough). Fold the 2 opposite ends of the dough over each other. Press them good in order to stick them together. You can add a bit of water to the one end of the dough (this is a small trick that will help the dough to stick better). Repeat this folding method with all the dough. Once you do that, leave fuži to rest 10 to 15 minutes.
Put fuži into a boiling and salted water and cook them for around 20 minutes. Cooking time depends on their thickness.
Cut the garlic. Take a bigger pan and put olive oil in it. Add garlic and red pepper and then stir and simmer for around 2 minutes. After that, add tomato juice and rosemary. Mix all the ingredients and cook the sauce for 30 minutes.
At the end of the cooking, add black pepper and salt into the sauce. Stir everything for a couple of more minutes. Serve fuži with sauce. You can add parmesan if you like.
This dish is excellent in the combination with white wine.
